Sapling is located on Rosby, an 80-acre property in Mudgee, home to Rosby Wines, the cellar door and gallery, and the much-loved Sculptures in the Garden exhibition. Set among vines, gardens and open country, Rosby is where wine, art and landscape naturally come together.

Art has always been part of the Rosby story. The cellar door gallery hosts a changing calendar of exhibitions, showcasing local and regional artists in a space where wine, landscape and creativity naturally come together.
Across the property, guests can also wander through the sculpture garden and discover works set among the vines, gardens and open country. Each October, Rosby is home to Sculptures in the Garden, one of Mudgee’s signature arts events, bringing artists, collectors and visitors together for a celebration of sculpture, creativity and place.
Rosby has been part of the Norton-Knight family story since 1982, when Kay and Gerry Norton-Knight purchased the property. Over time, it has grown and evolved, with the vineyard planted in 1996 and a creative culture shaped through wine, art, gardens and community.
In 2021, Amber Norton-Knight and Cameron Anderson joined the Rosby ownership, continuing the family’s connection to the land while bringing a new chapter to the property. Through Sapling, they have extended the Rosby story once more, creating a stay that honours the past while looking gently to the future.
Rosby Guesthouse offers luxury country accommodation for groups of up to eight guests. With four king bedrooms, each with its own ensuite, it is ideal for families, friends or small groups wanting to stay together on the Rosby property.
The guesthouse has a generous open-plan kitchen, dining and living area, designed for relaxed entertaining and shared meals. It is a warm and comfortable country stay, perfect for groups who want more space while still enjoying the wine, art and landscape of Rosby.
Rosby Studio is a private, self-contained one-bedroom garden apartment, perfect for couples wanting a quiet country escape. Set beside the Guesthouse garden, it has its own sense of privacy, with a king bed, ensuite bathroom, kitchenette, sitting area and expansive district views.
The Studio can be booked on its own for a romantic getaway, or alongside Rosby Guesthouse for larger groups and wedding parties needing extra space. Guests can enjoy the same relaxed Rosby setting, with beautiful grounds, country views and easy access to the wider wine and art experience of the property.
